I drive ~2 hours to see my coach also, so yes it is fine. I practice my form with my coach once every 2 weeks, and have a routine roughed out for my next few weeks. Works well, I cycle through different assistance work to make sure I work my weaknesses while training alone.
I would not bother wasting my time with this. Don't try to come up with "new" exercises that you probably saw in a magazine....simple basic barbell deep squats.

Front squats are awesome..the choking feeling? get used to it! Actually, there's a little you can do..depends on how close your form is already. Before you pickup the bar, grip it overhand and rotate your shoulders/chest up then just relax your hands and slide under into the rack position...

well, you already do your cardio during martial arts, so I'd cut back on all that fluff. Curls and lat pulldowns won't really help your training that much. You have cleans/jerks listed, can you perform them properly with a coach?

I suppose it depends how heavy your lifts are also ;). I prefer MP over incline, jmho though. I would put MP on wed, incline on fri or mon, when you start to stall on a lift, drop the incline.
