I have served in a number of diffrent types of bars and resturants. I think if your starting off start at a chain resturant most of them give you good training and they are usually always busy. I have worked at a chain resturant I made some pretty good money there but there is way to much BS and politics for anyone to want to stick around for very long.
Places not to start off would be fine dinning and a bar. Fine dinning is not so much a rush but you have to be on the ball make sure everything is perfect it is more of an investment of your time but in the end pay out can be huge. I worked at a golf and country club not unusual at all for a memember to rack up a $1000 bill on a dinner for 4-6. You know what that means for you? $150 just from one table plus you probably have a 3 or 4 more tables with bills at a minimum of $100. Can be some sick cash but the people may get too you after a while they are rich and used to having there ass kissed.
A bar is so diffrent form the rest of serving jobs it is mad fast paced at times and you can't write anything done you have remember it all. I have found tip% to be way higher at the bar then anywhere else I have worked. On one pretty shitty night I only sold $200 but my tips from it where $80.
About the smoking thing very true they tip way better than non-smokers do they also drink more just more of a party people I guess.
