This may be a stupid question, regarding oatmeal...

I found a great recipie where I add uncooked oats, protein, water or non-fat milk and other sweetening ingredients like nutrisweet and stuff like that in a blender and make a shake. It's really easy, and works great in the morning because it doesn't take any time at all.

My question is, is there a nutritional different between cooked, and uncooked oats? Also, is there a nutritional difference between the instant packets of oatmeal and slow cook oats? I'm not talking about the strawberries and cream and all those flavored instant ones, just the regular flavor. Thanks. Iron
 
I'm with katalista --- oat bran is freaking awesome!

Anyway, instant oatmeal has a slightly higher glycemic index. The reason whole grains are lower GI is because they are structured and fibrous. I think instant oats don't have as much structure to be broken down by your digestive system. They probably liquify in your stomach more quickly than regular oats, thus speeding gastric emptying and raising the GI.

Whole slow-cooking oats have a lower GI than both instant oats and oat bran. They do not have as much fiber and protein as oat bran, though, so while the glycemic index of slow cooking oats is slightly lower, the glycemic load is slightly higher.

Extrapolating on some of the above information, I would guess that uncooked slow cooking oats have an even lower GI than cooked slow cooking oats. Uncooked oats probably take longer to liquify and break down.
 
Forgot one thing --- blending oats probably raises the GI, offsetting the lower GI of uncooked vs. cooked oats.
