1 lb of frozen shrim (the ready to eat once thawed kind)
2 cans of tuna
1 bushell of cilantro (I think it's called coriander in the eat coast and abroad)
1 large cucumber
2 lemons
1 large bowl
If you get the really small salad shrimps, then you need not do anything else. If you get anything bigger, chop them up into small, yet forkable chunks. Pour into bowl.
Open cans of tuna and pour into bowl with shrimp.
Cut the stems off the cilantro and discard. Dice a handful of the good part of the cilantro and throw into the bowl.
Cut cucumber into small square pieces and add to bowl.
(I cut the cuc in half, then each half in half length wise, then each piece into 3-4 length wise strips, then chop into small squares. I don't even peel the cucumber, thats up to you.)
Cut lemons in half and squeeze juice over the contents of the bowl.
Stir/mix all ingredients together. Serve on plate or on top of tostada, add hot sauce (tapatio) and eat.
*Optional
*Anaheim chili, diced and chopped, mixed in the bowl with rest of stuff.
*Avocado, chopped into small squares and mixed in with the rest ofthe stuff
Not sure of the nutritional contents, but it's high in protein, low in carbs (unless you eat it with a tostada), low fat (shrimp contains some fat) and great source of fiber. Might be good for CKD.
I make 3-4 servings (meals) out of this.
