I can't remember who asked me for this a week or so ago but here it is:
In a blender mix
1 1/2 c old fashioned oatmeal
3/4 c lowfat or nonfat cottage cheese
2-3 scoops natural or vanilla protein powder
12 egg whites or you can use the cartons of white and for that it is 2 cartons plus 2 or 3 whites
sometimes I put in a drop of skim milk
Blend the crap out of this and cook just like regular pancakes.
I like mine more like a crepe and that is what this recipe does but if you want them thicker like a regular pancake reduce the amount of egg white that you use.
I eat these cold with coffee, hot all by themselves, with tuna on them, hot with some fruit in the middle, I use them like tortillas...
This makes a bunch and I put them in a zip lock gallon bag and keep them in the fridge - it has become my Sunday afternoon project.
