Protein/Carb combo for bulking?

Please dont flame me here, but im probably gonna start a proven PH stack or a cycle in December when i can start bulking again. Knowing i will have that added boost in synthesizing my protein:

1. How many grams of protein should i be taking a day if i weigh 180 and am workin chest, tri's, bi's, back, and legs twice a week (one heavy compound movement focused day, one isolation and shaping day)?

2. In my post workout shake, im probably gonna have at least 40-50g whey. Now as for the carbs, do i want simple carbs or complex? About how many grams post workout also?

3. Before bed, im gonna be taking ProM3(casien protein). Its 50 grams per serving. Do i throw extra carbs in there as well, and if so complex or simple?

As for eating habits, i eat more than anyone on this board can imagine, but for some weird reason keep my 6-pack showin year round.
 
A Shaping day for example would be:

Chest - tryin to hit the upper chest (yes i believe in this, wait til i show u my before and after pics on my bicep peak that isnt supposed to be possible)

Back - Hittin the lats in different areas that need to be matched and caught up to others.

Triceps - hittin certain heads that are not up to par with the others.

Biceps - workin on peak (like i said, il post pics in few months) and inner, outer, and bracialis heads

Quads - workin for the sweep, seperation, tear drop, etc... whatever needs it

Calves - soleus or gastroc work (standing for gastroc, seated for soleus)
