protein alone?

as i'm trying to get down to 6% or as close as i can i'm knocking out carbs at almost every meal. i've been putting oats in my protein shakes and eggwhites in the morning (6 tablespoons total)....both are taken before 9:30am shake at 6:30 eggs at 9ish. should i elimiante them? chicken, tuna, green beans and brown rice are pretty much my staple for the rest of the day. i'm taking in about 100g of carbs a day.....35-40g of fat about 2000cals 275g of protein. do these macros look ideal to get down to that level? i've seen decent progress thus far but think i'm hitting a plateu...not sure if the carbs were to high....but i didn't want to take protein in by itself as i read it turns into to carbs if not absorbed. thx
