Drop an egg in some slowly boiling water and wait for it to turn white (2-3 mins) and you have a poached egg, they are beautiful on toast, One of my favourite meals is four slices granary toast a can of baked beans and half a dozen poached eggs on top, with plenty of black pepper.
I was gonna say what you already said about the casein protein. You could make some scrambled eggs with a ton of melted cheese or something like that. I probably wouldn't go too crazy with carbs just before bed though.
