Potato question

I do like eating baked potatos and I was wondering if eating the potatos peel has any pros/cons.

Please explain.
 
Pro's: more fiber than the spud alone, and some vitamins and minerals.

Con's: if the skin isn't properly washed before baking, and the "eyes" aren't cut off, there could be gastrointestinal consequences.

So more pros than cons provided that the potato has been washed before baking, huh?
 
yes, keep the skin

w/o the skin potatoes are quite high GI

the skin, since it is rich in fiber, lowers the GI
 
as for the cons, you'll find all the pesticides residues in the skin :(

May be organic potatoes are a good deal...
