Olive oil question

Would olive oil lose its quality if it is being heated ?

Would be Ok to fry egs or other food by using olive oil?
 
Olive oil generally doesnt loose its quality by being heated... However If you start frying, with those really high temps.. it may a little .. but for frying eggs & other foods, you should be ok :p
 
Depends on what you mean by quality? THe Omega 3 oil chains do break down easily when heated so you do loose them when used in cooking...
 
you SHOULD NOT heat poly unsaturated oils (as flax seed oil, wheat germ....)

Olive oil = mostly mono-unsaturated oil
You can cook and fry with it (see the Italian and Greek diet)

But, as CrimsonKing said, you'll destroy some omega 3s fatty acids
