Sigh. I figured.

Do you know how they make (authentic) nuoc mam, that fish sauce? They put anchovies in the sun and then collect the runoff from their dehydrating bodies. Sickening, isn't it? And it's the fundamental ingredient in their cooking.

Some of the best Vietnamese cuisine is in Vancouver, by the way. I once went to, um, a Mexican restaurant operated by Vietnamese there. Goi cuon enchiladas.

i hate to say it but i love fish sauce... no matter how it's made.

i bet vancouver has good vietnamese... actually where i'm from has a big asian population too and it's really good there as well.

toronto had some tasty places on yonge st too... and there was a cool one in london (ontario) that was cheap too.

someone asked me what kind of meat is in the spring rolls and i could only reply, "mystery meat". it's pork i think... but who really knows... :)

I love the fish sauce too, I just hate thinking about the anchovies that died of sunstroke to make it.

I have actually become nearly as fond of Malaysian cuisine as Vietnamese but the most perfect food in the world for me remains sushi.
