Looking For Hunza Bread Recipie "Real One"

Hi Ladies,

Just wondering if any of you have the "real" hunza bread recipie.
I have been doing some research on the internet and it seems there is some confusion surrounding this recipie.

I think you'll find the 'real' one doesn't exist except in some westerners head. No doubt the Hunzas make bread out of whatever they have available seasonally. For instance coarsely ground millet, water and dried apricots, maybe some nuts if they have some. But it's a pretty basic, unleavened, whole grain flour recipe most of the time. Those folks don't have gorcery stores or pulverising flour mills and huge fields of wheat, leavening agents, sweeteners etc... that's for sure. Also please don't buy into that 'diet Hunza bread' nonsense. The Hunzas are lean because they work hard outdoors and subsist on a diet that AVERAGES ~1800 cals per day for males and 1600 cals for females. There are lean times when they eat less than this, and harvest times when they eat more than this. It's not the bread that prevents obesity!!!!!
 
This is prolly as close to 'real' as you'll find:

Typical Hunza Bread is made fresh each day from stone ground grains,
primarily, wheat, barley, buckwheat and millet.
These delicious flat unleavened breads are an important part
of a nutritious diet of grains, fruits, dried fruits, and veggies. (MY NOTE: The Hunzas also eat a decent amount of full fat dairy products, something the author of this recipe chose to exclude for some reason)
They drink substantial amounts of "Glacial Milk" which is milky colored
water fresh melted from base of glaciers, rich in rock flour and minerals.

A Typical Hunza Chapatti Bread Recipe Is Kamali:

2 cups of stone ground whole wheat flour, or mix of flours
1/2 teaspoon vegetable salt or iodized sea salt
(Although they have rich mineral diet,
iodine is rare away from marine locations and fish.)
1/4 to 1 cup glacier milk

Blend flour and salts together. Stir in just enough water to make a very stiff
dough. Knead dough on a lightly floured surface until smooth and elastic.
Cover with a wet cloth, set aside for 30 minutes. Break dough into one inch balls.
Roll into very thin rounds, about 8 inches in diameter. Bake for 10 minutes on a hot
lightly greased griddle over a low heat. Turn often. Makes 20 Chapattis.

Very nice! I have a sister who's following the "Hunza bread diet", and I would send this to her, if I thought she'd still speak to me afterwards.

LOL, All bread will curb hunger to a certain extent and a limited time. True stone ground unleavened whole grain breads will almost certainly leave you feeling fuller for longer (for the same calorie intake) than wonder bread. Above and beyond the whole grain component and lack of conditioners, flavorings and leavening agents, there is nothing magical about 'Hunza' bread.
 
Might be worth pointing out that some grains are better tolerated by folks than others, for instance buckwheat (compared to wheat) is higher in iron, magnesium, copper, lysine, and has no gluten, tannin or haemagglutinin activity. Good for celiacs. Millet, although high in iron, is pretty goiterogenic. In the long term this is prolly not good for your fatloss goals, even though in the short term it might decrease you appetite. But it is really naive to believe you can just eat flat bread and solve all of your diet problems. If you have enough will power to eat JUST Hunza bread in the small quantities recommended on the "hunza bread diet", then you WILL lose weight. "Hunza" bread is certainly better/less bad than processed white breads.

LOL at myself your right MS. Im basically looking for something other that Whole Wheat Bread.... I kind of like the idea of making my own bread at least I know what is in it :D

No offense here Project, but I was looking at your avatar and at first i thought maybe it was spatts, but then i realized the muscles werent big enough to be hers! :lmao:
