How much carbs are required to spike insulin and have an effect on blood sugar, I mean if I go and grab an M&M is it really gonna have an effect on insulin or am I cool?

well to cause a SPIKE, you need around 40g's of a simple sugar. Insulin can be secreted by the pancreas with the presence of as few as 6 g's of carbs. This is why Mr. X's CKD specifies that never are more than 6g's of carbs to be taken in at one time.
