OMG!
I swear I was eating tenderloin. That bird was that:

soft
juicy
I normally eat my steaks rare, but I have this mental thing about not eatong poultry rare (but I hate well done steaks) so I compromised and cooked it 3/4 (it was the slightest shade of pink inside).
The texture was right on the money, firm but tender, it was somehow crusty outside (I used only salt grains, the raw kind and that sort of forms a crust when grilled).
It went down with some spinach gnocci.
Fuck, that was a good lunch. I can predict a lot of ostrich in my future, it is slightly cheaper than regular beef (any prime cut except tenderloins) so that also works on its favor. They go for 4.59€ for a Lb (that is about $6.2)
I can only presume the protein % is about the same and the fat might be a bit higher, but other than that, awesomess.
100% recommended, if you can get it. A good red wine would go perfect with this as well.
