and if you ARE ever looking for time to kill in KY, the distillerys are worth the visit.

Yes they are! If ever in Scotland, do a distillery tour there as well. They are very informative, and there are usually "perks" at the end....

Maker's rules... i have been an ambassador for years now. the distillery is close to me evidently.

Once the bourbon is made, it is aged in a barrell. Depending on the destillery and what they're after, it may age as much as 20+ years. Some as little as 4 years. The older the bourbon, the better the quality and a lot of time, the stronger.

Each of the distillerys use different techniques for the aging. Many use a charcoal lined barrell where the inside of the staves (slats in a barrell) are charred to add flavor.

I met the VP of Wild Turkey's Kentucky operations about two years ago when I was doing some work for them. He said they sell some of their used barrells to distillerys in Scottland who then use it in their aging process. Kinda blends the taste.
