ahhh

lemme see if I can find it

Its prolly a sweet and sour mustard sauce (not really a cajun sauce though) But I bet I can find it for you.

I have a recipe at home for wings and sauces, Not really hard to prepare at all. Esp if you marinate the wings before hand. I'll pm you in a bit.

K... don't know what they are doing but try this one!

SWEET AND SOUR CHICKEN WINGS

Sweet and Sour Chicken Wings Ingredients:

2 1/2 lb chicken wings with tips removed
1/3 cup Crisco
1/3 cup vinegar
1/2 cup firmly packed dark brown sugar
1 (12 oz) can unsweetened pineapple juice
3/4 cup catsup
1 tbsp soy sauce
1 tsp prepared mustard
1/8 tsp salt (optional)

Sweet and Sour Chicken Wings Method:

Brown wings in hot Crisco, adding more, if necessary. Remove wings as they brown. Drain drippings from skillet. Add vinegar, sugar, juice, catsup, soy sauce, mustard, and salt to skillet. Bring to boil, stirring occasionally. Simmer gently about 5 minutes. Add browned chicken wings. Cover skillet. Simmer 15 minutes. Turn wings and cook uncovered 15 minutes longer. Serve with rice.

That sounds good, I'll have to try that. I am still waiting for my pm recipes! :p

Oh I have a wonder crawfish dip I can share that everyone just loves! Makes allot and is very fattening so I usually only make for parties. Best part is it is one of those recipes you have to make day before because it has to be cold. So yummy even when I subsitute everything with fat free or light ingredients. Let me know if interested.

Depends on the spice you desire... I would add in a tiny bit of Habanero peppers. Be VERY careful though!

There are a wide variety of spices (mixed) here that add in both salt and pepper to dishes. IE, Tonys, slap ya mama, Zat's. It mostly Cajun.. would not consider it Creole because believe it or not they are two different things.

I'd dice the peppers up very fine and cook them in slowly, adding to taste because I don't know your taste in peppers. I love for my mouth to be on FIRE! Most don't, so I'd go slow... test the sauce and if not enough add more. Now the Habanero will give you a different taste from reg ol' red pepper. So if you feel enough Habanero you can add in some red pepper to spice it up a bit.

Also Garlic, (gosh, I love me some garlic) diced up very very fine will add to the taste.

Can you get crawfish even off season where your at? Well, here it is anyway.

Cold Crawfish Dip

2 pounds crawfish
1 bunch green onions (split bunch in half)
4 8oz Philadelphia Cream Cheese
1 cup mayonnaise
tabasco to taste (I add about ½ teaspoon at a time and taste) worcestershire sauce to taste (I add about ½ teaspoon at a time and taste)
1 stick margarine

Melt margarine in skillet; add ½ bunch chopped green onions and saute until wilted. Add crawfish tails (with fat) and saute for additional 15 minutes. Remove from heat.
In mixing bowl, combine softened cream cheese and mayonnaise; mix very well. Add sautéed onion and crawfish mixture to bowl. Add tabasco and worcestershire sauce to taste. Add remaining ½ bunch of chopped green onions. Chill for several hours or overnight. (Overnight is best)
Hint: I know that I have just the right amount of worcestershire sauce and tobasco when the dip is a pale peach color but taste as you go to make sure.

Now I will usually subsitute the cream cheese and mayo with light version. As awesome as this is please don't taste it till it is cold! Serve on crackers

The 1st time I bought it I bought it in New Orleans because the name was funny and wanted to show people but now they sell it at the local Wal-mart!! It is good. I think it may actually be better than Tony's since Tony's has more salt than I care for. If slap yo mamma has as much salt for some reason I can't taste it AS much.

http://www.pepperpalace.com/

Try this website....went there when I was in Tennesee and bought a few things there. Huge assortment of peppers, sauces, bbq sauces..anything you can think of. Funny thing is alot of it was made down here! I just couldn't find some of the same products offered. Wal-mart doesn't sell EVERYTHING. lol
One of the ones I bought was MR. Pain....that shit is so hot a dap will do ya! We have lots of friends we have gotten to taste it that swear they can take anything ..... well, they only thought they could till they tasted Mr. Pain. lol
