that makes it sound like ther is something magical or special about the diets they sale over there, that some how that diets are only for the elite and very advanced trainie

I think what Dial_tone meant was that if you're dieting for a show, and need to be spot-on with your diet, you NEED someone with experience to plan it out perfectly for you. A weekend warrior with nothing at stake doesn't need to be in peak physical rippedness. It has nothing to do with how advanced their training is.
