dinner will be good

in order to kill the boring ness of regular BBQ chicken, i'm marinating some theighs for the grill tonight. half are in a Teriyaki Ginger marinate, the other half in a Baja Chipolte marinade.

i began drooling when i smelled the baja chipolte marinade. Jen, i could use some of that salsa. dinner will be around 6, which gives you plenty of time to bring me a jar :p

The Baja marinade does sound good....... I may have to make some salsa chicken tonite.....

salsa chicken = good stuff. i've done that before and let the salsa just cook onto it while on the grill.

i also like to take salsa and put it on burgers, then cheese, and let it melt. put on bun, add lettuce and sour cream, and you're in business :p

yeah, gotta get my weekly supply of chicken cooked. i'll cook up anywhere from 4-8lbs of chicken on sunday or monday so i have something good to eat during the week. it saves me from going for junk food as much, plus good source of protein.

i go cheap and get legs. 79cents/lb for legs or over 2.25/lb for breasts...can't argue with that when you're on a budget. i buy at least 5lbs of chicken a week whether i need it or not. have tons of room in the deep freezer, so might as well.

The burger thing sounds good....mmmmmm....don't have any sour cream tho....

I was thinking of cooking the chix on the grill with dry seasoning, but not cooking it all the way thru and just finish it in a pan with the salsa filling the pan like a sauce.....I think it would be good with some rice.....
 
served over some rice definetly. stir some salsa into that rice upon completion :p

ok jen, dinner at your place or mine? this is just sounding TOO good.

never used dry seasonings. i need to get some and try.

Well, by dry seasonings, I just mean pepper, Cajun, Garlic/Pepper/Salt......I buy alot of my seasonings at Value City (cheap dept. type store) cuz they have mixes for .59 cents which is really cheap & I can afford that..... They are actually fresh & good --- for a change of pace Lemon Pepper seasoning is excellent on chicken....

You can come over here, but my place isn't kid proof & you can't smoke in my house....
