Mmm, I guess you're reading more exactly than I am. Are you counting the sweet potato and beans she said she was eating, but hadn't counted, as adding up to the ~5% difference between the 40% she originally posted and the over 40-45% you are referring to?
I eat tons of fibrous veggies, but I don't count them all - only the green pepper, spinach and broccoli. So, technically, I'm eating exactly or just under 40% CHO, and you've said you can get yourself and others shredded at even 45% (with rather low fat, which has some significance(?)). If I counted the fibrous veggies, I'm sure it would be a few percentage points higher. You said not to count the fibrous veggies until the final week. Are fibrous veggies included in that 45%?
The fat question is, I guess, rather common knowledge/sense by now, but any special reason why vegetarians in particular should keep it low?
