Cooking Chicken in a crockpot!

Hi,

Just incase you're interested here is a crock pot recipe that I got from another board. I have made it 10X's already and it's great.

Crockpot Sour Cream Salsa Chicken
Serves 4

4 skinless boneless chicken breast halves
1 pkg reduced sodium taco seasoning mix
1 cup salsa
2 TBL cornstarch
1/4 cup light sour cream

Spray crockpot with cooking spray. Add chicken breasts. Sprinkle with seasoning. Top with salsa. Cook on low for 6-8 hours. When ready remove chicken. Mix cornstarch with a small amount of water. Stir into salsa sauce. Stir in sour cream.

Note: I made this today and everyone LOVED it. I served it with bulgar wheat instead of rice and everyone liked that too (bulgar wheat has half the points of white rice and a lot more fiber). Also, I didn't have any taco seasoning so I found a recipe on the internet and used that instead. In case you are out of taco seasoning, here's that recipe:

Taco Bell Taco Seasoning
2 TBL flour
2 tsp chili powder
1 1/2 tsp dried minced onion
1 1/4 tsp salt (I only used 3/4 tsp as the above recipe calls for 'low sodium')
1 tsp paprika
3/4 tsp beef bullion
1/4 tsp sugar
1/4 tsp cayenne
1 dash onion powder

I'm going to try this tonight. Lately I have been just microwaving the stuff and choking it down. Might as well make it tasty:p

HI Mrs. P,

Well 1tbsp of cornstach has 7grams of carbs. So for the two tablespoons the recipe calls for, that's 14 grams. It may seem like a lot but don't forget that it's 2 tbsp for the whole recipe. I have even cooked it like this with 2 pounds of chicken breast(roughly 8 breast) only used the 2 tbsp of cournstarch and it was still very good. I have plenty more where these came from. If interested let me know.
 
Thanks...that's not too bad. And, yes, please, more!!! I get those 4 lb. bags of chicken breasts or tenders at Sam's Club and I've about had it with grilling them for a while. I alternate our meat mainly between that and lean ground beef. Although last night I used ground turkey breast and made meatballs cooked in chicken broth...they were pretty decent. :)
 
simplest crockpot recipe in the world

take as much chicken as you care to eat.

put it in a crock pot

turn the crock pot on low

add 1/2 to a whole bottle of Gates bbq sauce

cook it until the chicken is done (duh)

best darn chicken ive ever eaten
