Caribbean Chicken Stew

Classy Skank
4 Boneless, skinless chicken breast halves, CUBED
1 tsp. salt
1 TBS. chopped FRESH Thyme
1 TBS. Curry powder
1 TBS crushed garlic
2 TBS. molasses
1 tsp. SPICY Mrs. Dash
1/4 cup water
2 Med. potatoes, washed and cubed
2 Med. carrots, washed and cubed
1 Med. Onion, cubed
1 Large tomato , cubed
1 TBS. Hot sauce or jalapeno pepper sauce
1/4 tsp. black pepper
Non-stick cooking spray

In a large bowl, combine chicken with the next 6 ingred. on above list. In a non-stick stainless - steel pot thourghly coated with cooking spray, saute chicken mixture over med. high heat until meat is browned on all sides. Stir in remaining imgred., reduce heat and simmer 20 minutes. MAKES 4 SERVINGS

Per serving: 288 cals., 31 gram protein, 33 grams carbs., 3 grams fat, 4 grams fiber.

Sounds delicious vix. Might give it a try. I'll throw some capsicum or celery in there though and hold the Jalopino's.........bit too spicy for this Greek:)
