FPS - RTCW, Serious Sam, SplinterCell, Ghost Recon
Action/Adventure - Dungeons&Dragons Heroes, Baulder's Gate
Other - Crimson skies (since you have a projection tv)
Horror/Mystery - Fatal Frame (freakin scary game, weird too)
Action - Lord of the Rings Two towers & return of the king, GTA3>A Vice City double pack
Those are some I have or have played and are worthwile.
There are some awesome games (halo2, Doom3, Halflife2, Ninja Gaiden, etc.) that will be coming out in a few months.

RTCW, splinter cell, DOA3, and ghost recon are all great.
Although I much prefer RTCW on the PC, it's still a killer game on xbox.

My buddy's and I play my Xbox just about every night on the weeknights, here's a few of the favorites....
Hunter: The Reckoning (I am suprised nobody mentioned this one, this game kicks ass!)
Madded 2004
Halo!
Dead or Alive 3
Soul Caliber is ok
Both the GTA's
I always like Gotham Racing
Red Faction 2 (This game kicks major ass if you have a bunch of buddies to play against)

Ghost Recon (the 1st one) is now Platinum Hits, which means it's only $20. There are a couple other Platinum Hits @ $20 that are decent games. Splinter Cell is one of them too I believe.
Serious Sam is a really good game if you liked Halo. It's like Halo on speed. It's been out for a while too, so you can prob. find it cheap or a good used copy.
Turok is another FPS, and is a fairly addictive game.
Somebody mentioned Gladius. I rented it last weeek. Don't judge it by the slow beginning, it really does get fun.
