Best sushi in Los Angeles, NY, other major cities?

So I've been to Nobu (The vegas and LA locations at least... it's overrated), Masa was good, but I'm lookin for those places that aren't 400/head and mediocre. The hole in the wall places with fish like butter and perfectionist chefs are my passion. Chef's that would slit their own throats in dishonor before serving me a piece of fish with a vein in it.

My vote in LA is split between Sushi Nozawa and Sushi Sasabune, the latter is closer to me and therefore gets more of my business.

I'm talking about SUSHI here, not rolls and crap. Nigiri or sashimi or other things comprised mainly of the actual fish. What is the unquestionably best quality sushi in your city?
 
YUUUUM! I love sushi. If ever in Chicago and not far from Lakeview try Katachi. It's a small hole in the wall and the staff are super friendly (the chefs and staff acknowledge all customers as they leave to say goodbye). They have an all you can eat buffet from the hours of 5pm to 7pm EVERYDAY for $20! And it's everything on the menu excluding drinks. That's EVERYTHING. Also, if you bring in a party of 4 people at any given hour they will honor the buffet price anyday, anytime.
Luckily I found this place doing a web search for sushi bars in Chicago and they are only 4 blocks from my house.

As I mentioned in my post. The buffet is the whole menu that they offer any other part of day. It's not the type of buffet where you go and stand in line to help yourself to prepared items sitting under lamps. Whatever it is you want is prepared fresh for you just as if you were to order it from any other good sushi place.

The thing is, I can go there during the "non" buffet hours and easily drop $40-50 on myself. But to go during those two hours during the buffet and get the same amount of good food for half the price is appealing.

Everyone I have brought there loves it there.
 
Montreal = Kashin Sushi on Edouard-Montpetit (take-out) or Miyako on Amherst (best sushi restaurant in the city).

Where is Ursawa?

Phili - Morimoto's hands down the best i've had. Been to Nobu before and this top notch place in Atlanta. Morimoto's is tops for me. I have a small place by me called Edo Mae but no one is going to come from around the country to try it, very very good though.
