best oil for frying

i was wondering what the best oil for frying is. I have some breading mix for frying fish, but i wasn't sure what kind of oil to fry it in (this is pan frying by the way).

i bought peanut oil cause i was told i can't fry with olive oil. is peanut oil a decent choice?

other options were canola, corn, vegetable, sunflower, and safflower.

Udo says that fried oils change chemically and become bad for you. Although I guess some is alright, I wouldn't go overboard.

There is this new type of oil called DAG Oil and it can't be stored as fat because it's missing a fatty acid and therefore cannot convert, I've heard it's good for light saute'ing. I just only recently started using it in cooking in like protein pancake mixes.
 
My understanding is that the oil isn't "destroyed" until it reaches it's smoking point. Different oils have different smoking points so it's best to use one with a higher smoking point to avoid the problem. Olive oil has a relatively low smoking point and isn't good to use in cooking. I use canola oil myself as it has a much higher smoking point than alot of other oils.

Also keep in mind that you can use oil in cooking in other ways than just frying. Frying has the most potential for damaging the oil but I often use it in other ways. I mix it in my french toast egg mix and then bake it in the oven so it has a nice crust to it, etc...
