I don't think I'd do well with that project but I know you would! What kind of restaurant? How is the restaurant scene in your part of the world Chef?

I'd like to have one where instead of waiters and waitresses carrying food to people on plates they would take big gobs of stuff and hurl it at the patrions who are just standing there with there mouths open. Same thing for the bar.

No thanks. I worked in a classy restaurant for many years and I never want anything to do with that again. Thanks for the offer though.

If you open one and you are the chef, I'll be there ready to eat. :D

The scene is pretty vibrant for a town of only 150k people. I have three very specific ideas that need to see the light of day, one corporate lunch/upscale takout, an inn and a 'white tablecloth' multi unit plan.

Will try the corporate lunch/upscale takout thing here probably after the first of the year. Hope to take it to the continent by first of the following year.

Would rather do the the other two, but they need to be in the states, are much more time intensive and that means I have to move the family. Will do that, but will avoid it if I can.

chef....why is it that most new restaurants fail? the food business seems to be the no.1 industry to go under the quickest....not that you would fail, simply asking why this is so- apparently you have experience with this...

Good for you man.

Hope everything works out for you in the venture.

You've been there, done that. It's all in the planning ahead of time

Its all about startup: build it, hone it, sell it. Next.

The inn will be for life so that comes last... if ever... :)

Lack of sound financial planning coupled with no market research. No question about it its the buiz you want to get into if you like to lose money. Then, there are those that take a simple idea with a sound foundation and do exceedingly well. I have been part of both scenarios. I like the latter one best.

chef, thats cool that you've experienced both sides of the coin...you will do well...i will come and eat there...

Hell no. My dad used to own a pretty good and expensive seafood restaurant. Things were going pretty well but this industry is cyclic and then in the early 90's came the Sushi madness. Then a few years after, many restaurants jumped in the "cigare lounge" thing. Then the Kobe steak and the nail in the coffin: restaurants turning into expensive nightclubs after 10-11PM... Too many up and downs for him and his biggest mistake was that he remained stuck in the 70's. If you know your market then you can make big buck.
