Accurate Glycemic Indexes?

I've spent the last 30min or so searching the net for some glycemic indexes, and almost all of them differ from each other, sometimes dramatically. Anyone know one that has a wide variety of foods and has accurate glycemic ratings?

Also, many foods that I saw surprised me, in that some that I assumed were high were low, and vice-versa.

Some foods are lower than expected because of fructose, lactose and galactose. For instance, sucrose, I believe, breaks down into fructose and glucose. Fructose and galactose don't affect blood sugar as much as glucose because they are processed by the liver somehow.

Fiber makes a big difference, too.
 
Insulin response is as important (even more ?) than GI

and doesn't

Blood sugar elevation=insulin response

I'm a little confused if not.:confused:
 
There is both a Glycemic Index as well as a Insulin Index. The I Index is more recent and is supposed to be different as well as a more important factor in measuring insulin response than the GI.

It is more complicated for a number of reasons. On example is that if you eat small amounts of certain fats, they will increase insulin sensitivity and thereby lower the insulin index of a food. The opposite is true of other fats.
