So the problem is with the additives, not the fact that the form of the food has been changed?

I have a question aboutprocessed meats. What exactly is bad in them to which I should payattention? For example, in my shop they sell chicken nuggets, wherethey only have chicken meat inside. Are these some preservatives thatare bad, or something else? The spices?
