I thought the whole glycemic index was based on insulin response. How can something be low GI and still elicit a significant response? This doesn't make sense to me.
100 g carbs isn't even close to a keto, it's just a really low-carb diet you've got there.
Too many supps in my opinion. You should get your meals from real food whenever possible.
That still looks like a lot of fat for a low fat diet. You should try to keep it below 30%.
Why don't you try an isocaloric diet to ease yourself into carbs and away from the fat?
