Mexican food

Anyone else here love mexican food? I definately do. Anyone have any high protein, healthy mexican recipes to share?
 
I deff luv Mexican food, but unfortunatley, dont have any recipes, but i know most of it is quiet fatning, with all the cheeses etc. but alot of the beans, & fajiatas are high in protein and alot of there Mex. marinades and spices are low fat, & citrus based so its a double edge sword...
Ex, salsas = low cal. low fat (can be made with avacado, mango, etc)
steak/chick. fajiatas, grilled=low fat, and the marinades can be spicy or citrus
spicy is always low fat great flav.!
I could get into the diff peppers, chipotles, chilis, halapinos etc, but ill let u do the research. good luck.
 
I love fajitas!! Grill steak, chicken, shrimp or all three/combo with taco seasoning. Saute (fry) in a pan sliced bell pepper & onion. Eat on a tortilla if you can have them. Also good alone or on a salad.

Baked, stuffed poblano peppers are good too. Slice off the tops & remove seeds. Microwave for 1-2 mins till slightly soft but still firm. Stuff with a mix of ground beef, ground turkey 9both or either one) & veggies and some egg white for binder & if necessary ground oatmeal, wheat flakes or bread crumbs (can exclude). Top with cheese if you like & bake for about 1/2 hour or till done at 350 degrees F.

Baked enchiladas are good too. Wrap into tortillas (if you can have them/low carb ones) a mix of shredded cooked chicken, veggies, cheese and place in a baking dish & top with a can of enchilda sauce. You can leave the sauce off & just bake them as is.....Or top with a green chile sauce....

Or in a crock pot cook chicken till it falls apart -- remove bones & gook -- & put back into crock pot with some tomato sauce, broth, hot sauce and taco seasoning -- for your taste and consistency. You can serve as is, on rolls, or tortillas....

Add spiced beans into any foods -- salads, rice mixes, the above shredded chicken. You can buy fat free canned refried beans which have less fat in them than the stuff you buy out (which can have lard) and use as you wish or make your own refrieds -- just partially drain a can of light red kidney beans & fry in a pan, mashing as you go....
