I almost always use fresh veggies, but I have heard that either kind (frozen/fresh) is just fine, and has the same nutritional value-----but then I hear that fresh always is higher, anyone really know?
canned- (not so good) usually too high in sodium.
frozen- Great!
fresh - Marvelous!
Freezing does actually very little to the macronutrients. i find that people would be better suited getting in the right amount of vegetables and fibre.. than worrying about the source.
I usually don't have the luxury of eating for fun or taste while I am dieting. Canned or Boiled veggies work for me. If you are worried about vits and mins, take a multi-vitamin.
1. hot pan (saute pan) + cold oil
2. toss in veggies
3. add a little liquid (wine, broth or whatever you want)
4. season (your choice of herbs & spices)
5. simmer until veggies are tender (most of the liquid will evaporate)
6. eat
