Important note about choosing salmon. Most supermarket and restaraunt salmon are farm raised. Avoid farm raised salmon. Farm raised is fed differerently from wild salmon. First they have less room to roam, so they are naturally fattier. They are fed a diet that can be high in inflammatory Omega 6 fats. Farmed fish are also thought to contain more PCB's and dioxins.
Buy salmon that is labeled "wild".
