Very informative as I have literally questioned myself this exact same topic as I workout very late in the evening and it can be hard to balance your macros post workout without adjusting them properly beforehand.
 
I only wish i couls find a good natural appetite stimulant as i find it hard to finsh my meals more than anything.....and I know my diet is preventing me from making the gains I should....there was a time I could eat 6 to 7x a day but as i got older, it became harder

Possibly try a vitamin b complex.. i tried it and it did seem to work, nothing drastic but I seemed to get hungrier more often.

A vitamin B injection seems to stimulate the appetite to a greater degree and provide numerous other benefits as well.
 
I have about an hour drive from work to home and/or the gym. Would a couple of hard boiled eggs eaten in transit be okay, just to have SOMETHING to eat?

Well of course it would as eggs do not contain carbohydrates and are a high protien/low fat food which would be a great option preworkout as described by Ben Pakulski.

Well some people might disagree with eggs being carb free the truth is that the carbohydrates in eggs is a very negligible amount. Unless you are eating over 50 boiled eggs in one setting it wouldnt make a difference in your workouts IMO.
