Knudsen Lowfat Cottage cheese with fruit is soooo good! Fast and easy too. I take a cooler to school filled with it. If you get 2% it slows digestion and tastes better than nonfat. I've tried brands other than Knudsen and they just don't taste right.

A little bit of canned peaches on cottage cheese tastes like dessert! MMM MMMM good!

Don't for get lean ground turkey. I use it in place of ground hamburger when keeping a close eye on calories. And it is nice to have a grilled burger once and a while.

I also make a big pot of whole wheat pasta. Toss in tomato sauce (no sugar spices, and ground turkey. Plop a 1/4 of cottage cheese on the plate, and heat in the micro just before you serve. Very good.

When using ground turkey go for the ground turkey breast. When they ground regular turkey, they through in everything, including feet. Not too appetizing in my opinion or healthy.

I like cottage cheese mixed with salsa, dip with carrots!!!! Yummy!!!!!!!!!!!!

Will think of some other of my recipes and post them later.

I like my tuna mixed in with some lowfat cottage cheese. Add some onion and dill relish and roll it up in Romaine lettuce leaves.

Have any of you had a look at recipes from Club Creavelle by Laura Creavelle? And I think she's got another cookbook out now too. I haven't seen either of them, but I'll bet they've got some tasty ideas in them.

Okay, here's one for you. It sounds really weird, but it really hit the spot for me. I have a mean sweet tooth during my period, so I was experimenting in the kitchen last night.

I blended some fat free cottage cheese until smooth. Added an egg white and some skim milk (not much). Some equal and cinnamon. Mixed it all up and popped in in oven for 30 - 45 minutes in a small casserole dish. It's really good warm. I pretended I was eating a custard and it was really close.

Like I said, it's different, but I enjoyed it.

I tend to make this recipe when I get sick of chicken:
Preheat oven to 350
Beat Egg Beaters(equivelent of 4 eggs), mix in 1 1/2 cups fat-free or low-fat cottage cheese, 1 package of frozen spinach(thawed and squeezed) and 1 1/2 cups fat-free shredded cheddar cheese. Bake in casserole dish for 1 hour.
