Why do we do cutting and bulking?

Why do everybody think only about bulking or cutting – is there any logical reason for such a rollercoaster that people make their bodies go through? Isn't it easier to just aim and go for the body you want to have without having to do all these circles? Or am I a black sheep because I am thinking this way?
 
@steve is right there - different people have different goals and potential. However, I am personally an advocate of lean bulking, where you find that fine balance between bulking, and not getting additional fat. However, this is not something possible for everyone, and should be considered on an individual basis.
 
Cutting and bulking is a very old school thought. There is no need to gain 30 pounds and make yourself fat in order to put on muscle.

Building muscle is a slow process. Your body can only absorb and utilize so much food. Over eating will just make you fat. It's kind of like your car's gas tank. It can only hold so much fuel.

Look into carb cycling brother. Carb cycling makes a lot of sense. Both scientifically and in a real world sense. No one will question the fact that carbs are anabolic. The problem with carbs is that too much of them will simply get you fat.

By carb cycling, you get the best of everything. The low carb days are fat loss focused and re-sythnesis muscle insulin sensitivity and the high carb days are very anabolic and replenish depleted glycogen levels.

If you are in good condition already I completely agree. There is no need to add tons of weight just to try to take some off. You can gain lean quality mass just by eating clean and gaining slowly.
