When you have a long layoff from training is it important to take things easy when you get back in? Low weights but good form ? What do you guys think?

Yes moderate weight with proper form slowly overload to prevent injuries

dude do you use NFL players jumping into the regular season after summer is over? NO

they have mini-camps, walk throughts, training camp, then preseason for 4-5 weeks.. THEN they have regular season. if they are doing it like that what makes you think that weight training is any different where you just show up and throw on 400 pounds and lift after time off?

Yes. It's always best to ease back into things.

Going 0 to 60 is a sure way to hurt yourself.
