Mac Cockers' Spicy Mediterranean Sausage Soup
Chef: Mac Cocker


Degree of difficulty: Low


You need:
1 red onion, finely chopped
Four fat cloves of garlic, finely chopped
1 chilli, finely chopped
1 can borlotti beans
1 can lentils
2 cans crushed tomatoes and
a spicy sausage of your choice

Method:
"Melt" the onion, chilli and garlic in a pan with butter until they're golden.
Then add the tomatoes and beans and simmer until the mixture thickens. Spice up the soup with a fragrant addition like a Chorizo (spanish sausage).

Mac Cocker says the longer you can leave the soup gently simmering on the stove the more flavoursome it will be. You can use dried lentils and borlotti beans if you have the time and inclination to soak them, otherwise the canned versions will be fine.

Wine suggestion:
You can enjoy this wintry soup with a glass of your favorite red.
 
Made a dish last night....

MEATBALLS TERRAVECCHIA

INGREDIENTS
400g minced beef/ 2 tbs. olive oil/ 3 cloves garlic, crushed/ 1 egg/ 2 slices of white bread/ milk ESSENTIALS 1/2 chilli/ 1 tsp. thyme/1 tsp. oregano/ 1 tsp. basil

SAUCE
2 medium onions, finely chopped/ 3 tins chopped tomatoes/ 2 bay leaves/ 2 tsp. parsley

1) Place beef, oil, garlic, egg and essentials in a large bowl.

2) In a separate bowl, soak two slices of bread in milk. Drain off excess milk, break bread into pieces and add to beef and herbs.

3) Mix contents well using hands and make into golf ball sized meat balls.

4) Cook balls in 385 degree oven on foil uncovered until browned (20-30 min) and set aside.

5) Fry onions in oil until soft.

6) Add tomatoes, bay leaf and parsley and simmer for about 10 min.

7) Add meatballs to sauce and simmer for at least 30 min. Serve with pasta.
 
did I mention that it is poverty stricken there and they don't shower too often due to lack of water preasure.
