Low Carb Suggestion for Chicken: (if fat is not an issue)
Cut into strips. Marinate in lowest carb italian dressing you can find (8 hours). For breading: 1/4 cup genisoy powder, Crushed pork rinds (about an 8 oz bag - crush in blender), 1/4 grated parmesean cheese Fry in oil - deep fry or pan fry. Use low-carb ranch dressing for dip.
For lower fat - omit the breading and stirfry or bake. Sprinkle with a little grated parmesean afterwards.
It's pretty good on top of a salad.
Another one - You can also pan fry strips and smother in a sauce made with chicken broth, heavy cream, salt, pepper, and tarragon. This is high fat, but low carb.
