Tuna options

Wheat germ Tuna Patties

Ingredients:
2 (6 ounce) cans tuna, drained and flaked
1 egg white, beaten
3/4 cup wheat germ
3 green onions, minced
1 clove garlic, peeled and minced
1 tablespoon soy sauce/ low sodium
1 tablespoon teriyaki sauce low sodium
1 tablespoon ketchup
1 teaspoon sesame oil
1 teaspoon black pepper
1/2 cup cornmeal
2 tablespoons olive oil
Directions:
1. In a large bowl, mix tuna, egg white, wheat germ, green onions, and garlic. Blend soy sauce, teriyaki sauce, ketchup, sesame oil, and pepper into the mixture. Form the mixture into about 6 patties approximately 1 inch thick. Lightly sprinkle each patty on all sides with cornmeal.
2. Heat oil in a medium skillet over medium heat. Fry each patty about 5 minutes on each side, until golden brown.
Tip* add more wheat germ if patties seem too soggy. Watch them closely they will burn fast.

Mhmmm that sounds good Needto, hope thats in your cook book!

What i usually do is take 2 or 3 serving have light flaked tuna, 1-2 tablespoons miracle whip, green onions, celery, lettuce, pepper...and thats it. tastes pretty good. You could put it in a wrap or bread if you want.
 
Honestly I mix the sh1t in with anything, toss it in with egg whites, soup, beans anything to moisten it up and marinate it a little and it's good to go. It's really just the dryness that's so horrible , even if you toss a can in with a omelet it goes down easy.
