tips to cook fish

Hi guys, I wonder what makes fish rubbery every time I cook it or it brakes into 100 pieces, I basing my diet on seafood, chicken and veggies but fish gives me a hard time to cook , I need some tips here bros , thank you.
 
That also depends on the exact kind of fish we are talking about. Some types of fish will inevitable fall in pieces due to the nature of the meat. Whilst others, will stay in one piece. For instance, nile perch, or perch in general, will stay in one piece as a steak, no matter what.

Try poaching it with parchment paper. It will keep the fish super moist. When you cook fish in parchment paper, it keeps all the moisture in the fish and prevents it from getting dry.
