Slow cooker a good tool ?

[FONT=&quot]got a slow cooker for xmas, what's the consensus on slow cooking our chicken, beef, pork etc?[/FONT]
[FONT=&quot]Though meat will come out succulent and fork tender, has the slow cook process eliminated / denatured some of the protein? Never gave this much thought but it's best to check.[/FONT]
 
Slow cooking is fine, and why would denaturing a protein matter. When you cook an egg etc that is exactly what you're doing. It changes the bonding of the chains so the conformational folding becomes different, but the amino acids are still there and the same. Your body breaks proteins down into these constituent amino acids and rebuilds them into the proteins it needs to synthesize regardless.
