Shrimp with Feta Cheese

Classy Skank
1 small onion- chopped
1/4 cup white wine
2 1/2 cups FRESH tomatoes- chopped
2 T. fresh parsley- chopped
1/2 t. dried oregano
1/2 t. crushed red pepper
1/4 t. salt
1 1/4 LBS. large or med. shrimp- peeled and deveined
2 oz. Feta chesse- crumbled
2 T. chopped fresh basil

In a 2 QT. sausepan, cook onion in the wine til the onion is translucent. Add the tomatoes, parsley, oregano, red pepper and salt- Cook on LOW heat for 10 minutes.

Add the shrimp, cook until they turn pink- about 2 - 3 minutes. Stir in Feta cheese and let melt. Sprinkle with fresh basil and serve.

SERVES: 4

233 cals., 33 gram protein, 6 grams fat, 10 grams carbs.
