Quick easy salads

Anyone got any good salad ideas to take as a packed lunch to work?

What i o is get a bag of organic salad from the supermarket then use 1/3 of the bag, chuck in a boiled egg or two or chicken breast (sometimes tuna but not too often as too much makes me sick), a dash of balsalmic vinegar and a table spoon of flax oil or mayo

any other ideas?

Great idea.

When I grill steaks, I'll make an extra one to put in the fridge.
Then cut it into cubes and put it on a salad with cherry tomatoes, purple onions, hard boiled eggs, pepperocinis, black olives, anything. Mmmmm cold steak on a salad rocks.....

p.s. If your taking it to work, store your dressing in a small separate container.....its worth it.

Try this:

Baby Spinich Leaves
Alfa Sprouts
Diced Tomato
Sprinkle low-fat parmasian cheese
Dashes of black pepper
Dressing (your choice) - I like Honey Dijon
*Optional -Albacore chunks (from Starfish Tuna Foil packs [in water])

Way better than boring iceberg lettuce!
 
Unpotato Salad

1 large head of cauliflower cut into small chunks
(steamed and well drained)
2 cups diced celery
1 cup diced red onion
2 cups mayo
1/4 cup cider vinegar
2 Tbsp salt
2 Tsp Splenda
1/2 Tsp pepper
4 chopped hard-boiled eggs

Combine cauliflower, celery, and onions in a large bowl.

Combine the may, vinegar, salt, Splenda, and pepper and pour over the vegetables-- mix well. Gently mix in the chopped eggs. Chill and serve.
 
Asian Ginger Slaw

4 cups finely shredded napa cabbage
1/4 cup shredded carrot
2 scallions thinly sliced
1/4 cup pale inner celery stalk thinly sliced
1/4 cup mayo
1 tsp fresh grated ginger
2 tbsp rice vinegar
1 tsp soy sauce
1 tsp Splenda

Comine the mayo, ginger, vinegar, soy sauce, and splenda-- beat together until smooth. Pour over veggies, toss and serve.

8 servings ~4 g carb and ~1 g protein
 
Broccoli Salad

4 cups of frozen broccoli "cuts"
(you don't have to thaw them-- you can just throw this all together and toss it in the frige but that's your call)

Whisk together:
1 cup olive oil
1/4 cup vinegar
1/2 tsp italian herb blend
1/2 tsp salt
1/8 tsp pepper

Pour the dressing over the broccoli and let it sit for several hours prior to serving.

6 servings ~6g carb, 4 fiber, 4 protein
