dark soya sauce, sesame seed oil, and oyster sauce??

my girlfriend is asian and she gave me all these things to make with these sauces. its basicly meat and vegetables and these three things in most of it.. im not using white rice. im using brown instead..

does anyone know if these sauces are good or bad for you?

also how bad is white rice?

I am chinese and when i used to be fat my mom would always cook with soya sauce. Some of the soya sauces contain alot of sugar per serving.
