any good high protein salad recipes??

Here is one.


Curried Chicken Rice Salad:
1 chicken breast, cooked and chopped
1 tbsp low fat mayo
1 tbsp plain yogurt
1 tbsp mango chutney
1 tsp curry paste
75 gr cooked rice
2 spring oinions, finely chopped
1 stick of celery, finely choped
3 dried apricots, chopped
Mix all ingredients together well. Serve 1

Real tangy fruity salad

Ingredients
chopped chicken pieces
2tbsp Lemon Juice
1 Small Apple, cored and cubed
1 Medium Pear, cored and cubed
1 Can/220g Grapefruit Segments, in Grapefruit Juice
1 Can/298g Mandarin Orange Segments, in Natural Juice


Pour the lemon juice into a bowl, add the apple and pear and swirl to coat.
Add grapefruit and mandarin segments (including all juice), gently stir to mix.
Pop in the fridge until ready to serve. Pour over chicke. (add whatever else you feel)

Italian Bean and Tuna Salad

Ingredients;

11 ounces canned baby lima beans, rinsed, drained
11 ounces canned dark red kidney beans, rinsed, drained
10 ounces canned Great Northern beans, rinsed, drained
5-1/4 cherry tomatoes, cut into fourths
1/4 small cucumber, cut lengthwise into halves, seeded, sliced
3-1/2 Tbs. green or red bell pepper, chopped
1/4 red onion, thinly sliced
2 Tbs. olive oil
1/3 cup tarragon white wine vinegar
1 tsp. dried basil leaves
2 Tbs. nonfat plain yogurt
1 Tbs. lemon juice
1/2 tsp. sugar
1 Tbs. water
2 cloves garlic
11 ounces tuna steak, broiled or grilled, or canned white tuna in water, drained, flaked into small pieces
5-1/4 large lettuce leaves
2-3/4 basil or parsley sprigs

Combine beans, tomatoes, cucumber, pepper, and onion in large bowl. Add the next 8 ingredients (basil vinaigrette) and toss. Refrigerate mixture at least 4 hours for flavors to blend, stirring mixture occasionally. Add tuna to mixture 1 to 2 hours before serving. Spoon salad onto lettuce-lined plate; garnish with basil.

You can make the bean salad one day in advance and refrigerate, adding tuna 1 to 2 hours before serving.


Per serving: calories 454, fat 9.1g, 18% calories from fat, cholesterol 37mg, protein 36.4g, carbohydrates 59.8g, fiber 19.1g, sugar 13.3g, sodium 76mg, diet points 6.5.

Dilled Chicken and Potato Salad

2 red potatoes, cut into bite-size pieces
1/4 cup plus 2 Tbs. olive oil
2 Tbs. white wine vinegar
1-1/4 lbs. cooked chicken, cut into bite-size pieces
2 Tbs. fresh dill, minced
2 scallions, finely sliced
2 Tbs. lemon juice
1/8 tsp. cayenne pepper

Place potatoes in a steamer basket over boiling water. Cover pan and steam 10 minutes or until tender. Drain. Toss warm potatoes with oil and vinegar. Let cool 15-20 minutes, tossing several times. Add chicken, dill, remaining ingredients and salt and pepper to taste. Toss to mix well. Cover and refrigerate until serving time. Serve slightly chilled or at room temperature.


Per serving: calories 475, fat 25.4g, 48% calories from fat, cholesterol 120mg, protein 46.4g, carbohydrates 15.5g, fiber 2.2g, sugar 2.9g, sodium 107mg, diet points 11.7.

Here is one

Avocado, Chicken and Pasta Salad:

200 gr pasta spirals ( uncooked)
1 large ripe avocado, sliced
1/3 cup low fat mayo
pepper
1/2 roasted chicken, cut in chunks
2 shallots, sliced
1/3 cup plain yogurt
Chopped parsley
Basil or mint
Cook pasta until still a little firm then allow to cool. Mix together all the ingredients, folding through the avocado last ensuring that it is not broken. Serves 4.
