I know to stay away from starches and such, but is it ok for me to eat wheat pasta, or wheat bread? What about later at night?

If you are trying to lean out, these are not the best choices for you,especially at night.Plan your meals so that you eat high GI foods when your insulin sensitivity is highest, in the early morning or immediately after a workout.Why dont you chose more complex,high-fiber items like sweet potatoes,brown rice....
 
to start off, actually wheat is pretty high on the GI scale, so I would try to eat foods like OATMEAL, brown rice, Yams, sweet potatoes..
and if you wake up at night hungry (don't have carbs->if you are trying to loose BF)
you should have a TBSP. of ALL NATURAL PEANUT BUTTER (or you can have a protein shake if you would like)... it should cut some cravings and get you full
